La pachade, la collation d’Auvergne qui tient au corps

The hour of Candlemas strikes at the beginning of February. And with it, cravings for comforting snacks. The children played in the garden this afternoon. Curled up in a plaid by the fire, you devoured this book. Or after a hard day's work outdoors, you are very hungry! That's good, we have the solution to relieve these hungry bellies: the pacade. A kind of big crepe with a debonair look that promises to hold you to the body. A simple and easy to make recipe from Auvergne. We offer it in a sweet version, to stick more to the traditional Candlemas. And what's more, it takes on the blueberries of the Hautes-Chaumes of Forez. Sure, tonight you're going to skip dinner.

The pacade is a beautiful thick pancake with crispy edges that can be decorated with sweet (fruit) or savory (cheese, country ham) ingredients. Born in the heart of Auvergne, the recipe thus made its rounds in the countryside, in all simplicity and without seeming to. It was traditionally consumed in the morning, at breakfast time. Indeed, at the table of this one, copious and often salty dishes were served: they were close to the body to attack the day on the right foot. In summer, when the peasants worked in the fields, the pacade was used as a snack at tea time.

-4 eggs
-200 grams of flour
-100 grams of sugar
-1 liter of milk
-1 pinch of salt
-250 grams of blueberries and 75 grams of sugar

In a large pastry bowl called "ass of hen", mix the eggs, the flour, the sugar then mix lovingly with a whisk, adding the milk little by little.
During this step, a small hand
can help you to make it easier.
Then add a pinch of salt.
Reserve 4 hours in the refrigerator after having previously covered it. You can also prepare it the day before.
Take the dough out and whisk it to wake it up.

In your favorite pan, pour a little oil, but not too much.
Then, add half the batter and watch it gently brown, before flipping it over with a spatula when it begins to solidify.
Start the operation again with the rest of the dough when the first pacade is ready.
That is to say, when it is golden, cooked and appetizing.

Finally, as a final touch: cover one of the cooked pacades with a mixture of Forez blueberries and sugar, before covering it with the second pacade.
